The existing interior had become dated, but the restaurant itself remained successful. The design therefore needed to create a noticeably fresher environment while protecting the approachable character of the venue and keeping the focus on sushi, seafood and Japanese favourites.

The renewed Sushio feels cleaner, lighter and more contemporary. Natural materials and a restrained palette complement the freshness of the menu while allowing existing customers to recognise the restaurant they already enjoyed.

A lighter colour palette replaces the heavier atmosphere of the former interior. Natural timber tones bring warmth and introduce a clearer connection to Japanese material restraint, while the simplified finishes create a brighter backdrop for the food. The intervention is deliberately measured, updating the customer experience without forcing an unnecessary reinvention of the restaurant.
