A Creative Partnership
hcreates collaborated with three Michelin-starred chef Paul Pairet to bring Moutarde to life. The project was shaped through a close creative partnership, where operational precision and design exploration evolved together to create a contemporary interpretation of the classic French bistro.
An Industrial Canvas
Moutarde focuses on French cuisine with a twist, emphasizing whole-piece cooking, carving, and sharing. Its interior was developed in close partnership with Paul Pairet, merging archetypal French aesthetic with contemporary design. The bare site, with its dramatic 8.5m-high ceilings, inspired the vision of a classic bistro set within a factory. We embraced the verticality and openness of the space, employing humble, industrial materials such as exposed brick, raw ceilings, and steel joinery to create a stripped-back shell.
Layers of Refinement
Into this raw framework, we inserted layers of refinement, introducing the bistro through carefully considered details. Cabinetry echoes antique wooden furniture, and billot de bouchers, while elegant elements—including chandeliers, etched glass, embossed leather, mirrors, and reflective subway tiles—create a counterpoint to the utilitarian backdrop. The resulting space balances a series of deliberate contrasts: raw and refined, rustic and chic, rough and polished. The exhaustive list of diverse materials and furniture layered throughout the space paying homage to the depth and identity intrinsic to Paul Pairet’s award-winning restaurants.
Scale Meets Theatre
The drama of the space is further elevated by emphasizing its height, with oversized custom chandeliers, heat lamp shades, industrial fans, mirrors, and playful XXL posters by Lucas Gurdjian. These elements celebrate the cheeky branding and customer experience that the food and beverage program bring to life.
Designing the Dining Experience
The spatial layout revolves around four key elements that define the perimeter of the dining area. An open carvery counter with a large wood-fired oven; the glazed maturation room and wine cellar, featuring dramatic displays of meat, cheese, and wine; which each frame the central bar. The dining area is organized around two large back-to-back banquettes, providing structure and scale to the expansive dining space. A private dining room, positioned to one side, is connected to the main area through large bi-folding etched glass panels, inscribed with the restaurant’s moniker—the French word for mustard. Moutarde demonstrates what can happen when thoughtful collaboration, operational excellence and a clear design vision are pursued with equal intensity. The result is more than a restaurant—it is an experience shaped by every conversation, every challenge and every detail along the way.
